You liked Catching Fire and Mockingjay a lot better than I did! I really didn't believe in Katniss/Peeta at all. I don't ship Katniss/Gale, either; I feel like not enough pagetime was dedicated to the idea that "it doesn't have to be me for either of them, and it doesn't have to be either of them for me" (paraphrased from something Mae Crawford said in Sarah Rees Brennan's The Demon's Covenant--at least I'm pretty sure it was Covenant). I feel like I'd have been a lot happier with the ending if I'd felt it had been acknowledged* that she doesn't actually have to end up with either of them, she doesn't have to become a wife and mother for her life to have meaning. *Maybe it was acknowledged and I missed it or I didn't think it came through strongly enough. It's been a while.
Although the point you make about it being a symbol of her hope, in her faith that the Hunger Games won't come for her kids--that's a good point, one that I hadn't considered. I might just spend some time rereading sometime soon, see if I don't change my mind.
